1-1/2 cups oatmeal
1-1/2 cups dark brown sugar
1/2 cup flour
1/4 teaspoon salt
3/4 cup melted butter
1 teaspoon vanilla
Preheat oven to 375 degrees Fahrenheit.
Mix the dry ingredients, then stir in the butter, the egg (lightly beaten), and the vanilla.
Place 2/3-tablespoon globs of dough on cookie sheets (parchment paper highly recommended), about 2 inches apart.
Bake for 15 minutes.
Makes about three dozen cookies.
Lemon Walnut Chicken Hearts
1 pound chicken hearts
1/4 cup walnuts
two large or three small lemons
Melt enough butter in a frying pan to cover the bottom of the pan.
Add the chicken hearts.
Chop the walnuts, down to 1/4" pieces.
Fry for a fairly long time over a medium flame, adding butter if necessary, until the chicken hearts are thoroughly blackened, almost burned.
Pour off all grease. Then add the walnuts and the juice and pulp of the lemons (with seeds removed).
Fry for an additional ten minutes.
